Omaha Steaks recently invented a new cut of steak. We’re sure you’re familiar with filet mignon, porterhouse, and NY strip, but add Omaha cut to the list. An Omaha-Cut Ribeye is only available through Omaha Steaks, it comes from the ribeye, but is triple-trimmed to look similar to a filet. You get the rich flavor and marbleization of a ribeye, but with a precise trim and thicker cut of a filet. These wondrous cuts of meat are aged for a minimum of 21 days then flash frozen and shipped to your door.

Sous Vide Steak

To perfectly cook the Omaha-Cut Ribeyes, we opted to sous vide them. It’s our go-to home cooking tool whenever we cook steak. Thaw the steaks the night before, then pat them with a paper towel to dry them off. Season generously with salt and pepper then add to a ziploc or food saver bag with pats of butter on each side. If using a ziploc bag, use the water displacement method to remove most of the air, this ensures your food doesn’t float in the water bath - science y’all! Set the sous vide water bath to 53 degrees Celsius and cook the vacuum-sealed bag of steaks for 1 hour in the water bath. Once an hour passes, the steaks are perfectly cooked, it just needs a nice sear. Get a cast iron skillet smoking hot, add butter, and sear the sous vide steak for 1-2 minutes on each side until a nice crust has formed. Be careful not to overcook it!

Sous Vide Lobster

We’ve never actually made lobster at home before, perhaps it is because we were afraid to mess it up and waste expensive seafood. We’ve been huge fans of sous vide for years, so we knew that the first time we cooked lobster at home we wanted to use the sous vide method of cooking the lobster. A precise temperature in a waterbath would ensure we didn’t overcook the lobster to a rubbery mess. We were FLOORED by how amazing the lobster turned out. Trust us, this is the perfect way to prepare lobster at home. With Omaha Steaks’ high-quality shellfish, mixed with our cooking technique, your home lobster will be better than practically any gourmet restaurant charging hundreds of dollars for the meal.

Omaha Steaks’ lobster tails get shipped frozen. We started by thawing the lobster out in a bowl of cool water. They were thawed in about an hour or so. Next we started our water bath for the sous vide and set the temp to 45 degrees Celsius. In the meantime, we brought another pot to boil on the stovetop. We flash boiled the lobster for one minute and then added them to an ice bath. This helped to loosen the meat from the shell, which now turned to a brilliant red color. We pulled the meat away from the shell and seasoned the lobster meat with the included seafood seasoning and then stuffed the shell with pats of butter. Finally, we filled a foodsaver bag with slices of lemon and the lobster tails and vacuum sealed the bag. We actually added it to a second foodsaver bag to double it up. The ensured that the shell didn’t puncture the bag. We highly recommend doubling up!  We added the lobster to the water bath and cooked it for 45 minutes. It turned out perfectly cooked, tender and flavorful. It’s best served with melted butter and fresh squeezed lemon.

This meal was the most romantic night at home we’ve had in some time. Gavin brought roses, we lit candles, and we actually dined at our dining room table (gasp!) rather than eating at the breakfast bar or snuggled up on the couch. We savoured a bottle of wine, and offset the butter-drizzled lobster and steak with a delicate green salad. The au gratin potato balls and raspberry cheesecake from Omaha Steaks as well were an easy and fantastic addition to the meal.
