Another recipe that we created on our Asian Tapas night were these Chicken Satay Skewers. The reason why we decided we wanted to have this dinner theme night was because it reminded us of eating all the street food during the night markets in Chiang Mai, Thailand. Thai Chicken Satay is the perfect snack because it is healthy, low carb, and totally scrumptious. Plus, one you marinade the meat, it grills up pretty quickly! This is also our go-to recipe for a quick weeknight meal.

After we moved into our new house, we were without a grill for a few months. That was the worst! We spent months researching smokers, gas grills, charcoal grills, you name it. We finally decided on a Traeger Grill, which we thought was the best combo of them all. Traeger uses wood pellets to heat the grill so it is both a smoker and a barbecue grill. Chicken Satay Recipe

Serves 4-6

Ingredients:

  • 3/4 cup unsweetened coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon packed light brown sugar
  • 1 tablespoon Thai red curry paste
  • Tablespoon of crushed red pepper
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon of onion powder
  • 3 pounds boneless, skinless chicken tenders
  • Vegetable oil to grease the grill
  • Peanut Sauce (try out our recipe!)

Preheat your grill to 375 degrees. 

If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill.

Mix together the first seven ingredients as the base of your marinade. Add the chicken and let it marinade for at least 30 minutes. Once marinated, spear the chicken with the skewers lengthwise.

Once the grill is preheated, use a paper towel to rub vegetable oil on the grill grates. Grill the chicken for about 4 minutes per side until cooked through, it will depend on the thickness of the meat.
