There is this magical place in Austin, Texas where you can order a molten bowl of queso with your breakfast that stays open LATE: Kerbey Lane Cafe. This cafe is such a well known part of Austin's community, and they are famous for their big fluffy pancakes. When Kerbey Lane reached out to us to make a custom recipe using their pancake mixes, we couldn't say no! We opted to make pineapple upside down pancakes with a vanilla icing glaze.
There is something retro about cafes, just like there is something retro about pineapple upside down cake. Maybe it is the maraschino cherries?!? Regardless, Karen has memories of her Grandma Reinsberg making this dessert when she was just a little girl, so we thought this pineapple upside down pancake recipe would be a fun twist, as everyone of all ages will enjoy this unique breakfast. Plus we never make plain old pancakes, have you seen our Smore's Pancakes yet!??!
Ingredients for the pineapple upside down pancakes:
- Kerbey Lane Buttermilk Pancake Mix (whole package) or another pancake mix of your choice
- 2 eggs
- 1 1/3 cup water
- 1 tablespoon cinnamon
- 1 can of pineapple slices
- 1 jar of maraschino cherries
- Sprinkles of brown sugar
Ingredients for the vanilla icing glaze:
- 1 cup powdered sugar
- 1-2 tablespoons water
- Vanilla extract, to taste
Make the Kerbey Lane buttermilk pancake mix as directed (eggs, water, pancake mix). Add 1/2 tablespoon of cinnamon to the batter.
Grease a hot griddle and start by placing a pineapple ring on the griddle. After about a minute, sprinkle with brown sugar and flip it so the sugar side is down on the griddle, this is going to help caramelize it. Add a maraschino cherry in the center of the pineapple ring. Ladle the pancake batter directly over the pineapple ring. Cook like a traditional pancake, carefully flipping once you see large bubbles emerging.
Mix together one cup of powdered sugar with a tablespoon or two of water, until your glaze reaches a desired consistency. Add a few drops of vanilla extract to the glaze and stir.
Drizzle your fancy flapjacks with the icing glaze and serve while hot!
